Pasta alla bolognese (finnish recipe a la Stezz)

This is the way it's called all over the world even though we call it in Italy "Pasta al ragù" (the ragù is "alla bolognese").

It's mainly made of tomato and minced meat BUT not only of that (and this is basically the difference between the one you find in "JukkaPekka's restaurant" and a proper italian one).

INGREDIENTS for 4 persons

• 1/2 onion
• 1 carrot
• a bit of persil
• 1 glass of red wine
• salt
• extravirgin olive oil
• 1.6Kg of sleeved tomatoes
• 0.4 Kg of minced meat (naudanjauheliha)

PREPARATION
Slice carrot, onion and celery in thin slices. Put 1 dl of oil into a casserole just to cover the bottom and put the carrot onion persil and celery in. Start frying at low temperature until the onion gets yellowish.

Then throw the minced meat in and cook until it gets brown. At that point put the red wine and let evaporate.

Now it's time to raise the temperature and to put the tomatoes that you previously slightly pressed.

Add 1-2 dl more of oil if needed and cook for 30/40 minutes (this would pretty much depend on the temperature you are cooking at) stirring regularly. You will understand that it's done when the sauce reduced its quantity to half of the original one. At that point the meat will be 50% of the tomatoes (you started at 25%).

Add salt as you like.

Cook the pasta now and take it out one minute before you usually would and finish cooking it in the sauce.

Add parmigiano in big quantity.

Italy vs. Finland (a statistical approach)

I've come across an economic measure called Gini index, the index is commonly used as a measure of inequality of income or wealth. A low Gini coefficient indicates a more equal distribution, with 0 corresponding to complete equality, while higher Gini coefficients indicate more unequal distribution, with 1 corresponding to complete inequality.

So I got interested in what the Gini coefficient might be in Finland and, as expected, it's not that high. But the most interesting thing is when it is compared to the italian one and its evolution during last years (unfortunately data is there until 2005 only).

It's incredible to see that after the introduction of the Euro in Italy the inequality has increased of 4 percent points while in Finland only of 2 points (with an absolute difference of 7%).

This basically means that after 2001 the rich are richer and the poor are poorer (and this is not big news). But more in Italy than in Finland.

Another quite interesting figure is the one that photographs the gross domestic product (GDP) per capita in purchasing power. GDP is a measure for the economic activity. It is defined as the value of all goods and services produced less the value of any goods or services used in their creation. The volume index of GDP per capita in Purchasing Power Standards (PPS) is expressed in relation to the European Union (EU-27) average set to equal 100. If the index of a country is higher than 100, this country's level of GDP per head is higher than the EU average and vice versa. Basic figures are expressed in PPS, i.e. a common currency that eliminates the differences in price levels between countries allowing meaningful volume comparisons of GDP between countries.

If we check this graph it's pretty evident (and also stunning) how after the introduction of the common european currency the average 'money to spend' of italians has been dropping like hell while in Finland remained mostly unchanged. With an end result of 15% difference between the two countries.

The whole post was an attempt to proof (mostly to myself) my personal perception that while in Italy people have less money to spend and there are still a lot of people that go around in a Ferrari, in Finland, while there are obviously poor and rich, the average guy can still live decently and the distance between poor and rich is not as unfair as in Italy.

Seeking for the perfect pizza recipe (in Finland)

In a struggle to find the perfect mix of flours here in Finland I managed to get close to something good with this recipe.

Ingredients

* 50% of Erikoisvehnäjauho
* 30% of Durum Vehnäjauho
* 20% of Hiivaleipäjauho

I usually make 1 Kg of dough I also put:
* 3/4 (0.75) of a glass of olive oil (extra virgin it's maybe better, don't use sunflower oil or similar in that case it's better without oil)
* 1 cube of fresh yeast (the standard hiiva from K-market or S-market), 2 cubes if you want to prepare the "high dough" (we call it Naples' pizza)
* 1 teaspoon of salt
* Some lukewarm water (I really never measured how much, the dough doesn't have to be sticky nor too dry, maybe 400/500 ml it's ok)

Preparation

Dissolve the yeast in a cup of water. (*** see update below)
Mix the three types of flour together with salt and olive oil.
Mix the yeasted water with the flour... and mix... and mix... and add other water until you get a compact, non sticky dough.
Roll it to obtain a ball.
Make it rise for 2 hours under a rag inside a big plastic bag (so that the moist stays inside and the dough doesn't dry).
Now you can split the dough in how many parts you want (I suggest 10 parts for the thin pizza and 5 parts if you want a thick pizza), make as many balls of dough and stretch the pizza with a rolling pin (or if you really want to try your luck with your hands making the dough fly in the air, but this is kind of Pro also for me :D ).

Topping
For the topping I use the tomato sauce that I find in Lidl and the ground mozzarella that is always there. Then some basilica and you have your "margherita" (not "margerita" or "margarita" as you often find in many restaurants around).

If you have more time and fantasy you can add Parma Ham or mushrooms or eggplants or zucchini or radicchio (here is called "punainen salaatti") or whatever you want.


UPDATE:
There is a small mod to the recipe that proved to be slightly better:

Change
* Dissolve the yeast in a cup of water
with:
* Dissolve the yeast in 3 spoons of lukewarm water and one teaspoon of sugar and wait until you see some foam (2/3 minutes usually) - The sugar helps a lot the rising process.

Finns go and buy Parmigiano directly from Italy (it's cheaper)!

Today, first time in 4 years that I dare to buy a piece of Parmigiano Reggiano from Stockmann (supplies finished... :( ).
Price: 43.5 euros/Kg
Well not bad it traveled so many kilometers...
Then I made some raw calculation. I checked the price of a Finnair direct flight from Helsinki to Rome for next weekend: 384 euros going Saturday and coming back on Sunday. In Italy the price for Parmigiano is about 14-15 euros/Kg (maybe in the airport itself it might be a bit more expensive I don't know). I can bring 20 Kgs of luggage and 6 Kg with me in the cabin. To fill it up of Parmigiano I need to spend around 400 euros. 80 euros for a night in an average hotel and 50 euros of taxi to get there and come back. Total expense: around 915 euros. Price per kg: 35.2 euros.

Well of course now you have the problem of eating 26 Kgs of Parmigiano :D

Pan di stelle

There is one thing that I miss from Italy that I still wasn't able to get here in Finland. The pan di stelle biscuits. Well bored of waiting somebody to import them from Italy I found the recipe and baked them.

Below is the result. The taste is much better :D

Finland and pizza Berlusconi

Finland is still shocked by the words Berlusconi pronounced some year ago and knowing finnish they won't forget easily. Berlusconi didn't make compliments to Finnish cousine while the european food authority was at stake:

"I have been to Finland and I have had to endure Finnish food, so I am certainly competent to make comparison. Today Barroso can taste our culatello (local ham) instead of Finnish smoked herring."

As a surprise the other day walking down the street I was stunned by this ad:

It translates more or less as: "Kotipizza's Berlusconi elected best pizza in the world." [Kotipizza is the shop]
Now I don't know how this pizza tastes (and honestly I will never try it) but I'm not really sure this would really be the best pizza in the world... maybe is a classic finnish joke to make fun of their (and also mine) beloved Silvio :)

Update: Public taxes declaration in Italy

Yesterday after they were available for a couple of hours, the Tax office received the order to stop distributing the tax records of italians on internet...

It seems though that now the tax records of the italians are available on peer-to-peer network... Let's see how they are going to stop it :D

He's always complaining because in Finland the tax declaration of everyone is publicly available and sent I don't know how many mails to the ombudsman about it.

And instead of Finland going towards "more privacy" "like in Italy", Italy goes open and, BAM! public tax records for italians! (At least one of the major italian newspapers claims so... even if it doesn't show up in the Tax office webpage)

Minister Rutelli and Alitalia "sales"

"Alitalia ha un azionista pubblico che è lo Stato e lo Stato ha il preciso dovere di compiere le sue scelte nell'interesse del paese definendo indirizzi industriali strategici per il sistema paese. Il che non significa scegliere in base alla nazionalità delle offerte, perché l'interesse del paese e dell'azionista può essere certamente assolto da soggetti non italiani".

Io direi, considerando quello che lo Stato Italiano fa e ha fatto, che soggetti non italiani farebbero l'interesse del paese anche meglio di soggetti italiani. E diamola all'AirFrance sta compagnia... vedi mai che un giorno funzioni davvero...

Andreotti è una persona perbene

Dalla rubrica Carta Canta di Travaglio su (nientepopòdimenoche) La Repubblica:

"Vorrei dire anzitutto che per me Andreotti è una persona perbene. Questo per una questione di chiarezza, e per eliminare qualsiasi perplessità a riguardo".

"Dovendo esprimere una valutazione giuridica sugli stessi fatti, la Corte ritiene che essi non possano interpretarsi come una semplice manifestazione di un comportamento solo moralmente scorretto e di una vicinanza penalmente irrilevante, ma indichino una vera e propria partecipazione all'associazione mafiosa, apprezzabilmente protrattasi nel tempo (...). L'imputato (Giulio Andreotti, ndr) ha, non senza personale tornaconto, consapevolmente e deliberatamente coltivato una stabile relazione con il sodalizio criminale ed arrecato, comunque, allo stesso un contributo rafforzativo manifestando la sua disponibilità a favorire i mafiosi. c) intrattenga con gli stessi relazioni amichevoli, rafforzandone la influenza anche rispetto ad altre componenti dello stesso sodalizio tagliate fuori da tali rapporti;
d) appalesi autentico interessamento in relazione a vicende particolarmente delicate per la vita del sodalizio mafioso;
e) indichi ai mafiosi, in relazione a tali vicende, le strade da seguire e discuta con i medesimi anche di fatti criminali gravissimi da loro perpetrati in connessione con le medesime vicende, senza destare in essi la preoccupazione di venire denunciati;
f) ometta di denunciare elementi utili a far luce su fatti di particolarissima gravità, di cui sia venuto a conoscenza in dipendenza di diretti contatti con i mafiosi;
g) dia, in buona sostanza, a detti esponenti mafiosi segni autentici - e non meramente fittizi - di amichevole disponibilità, idonei, anche al di fuori (...) di specifici ed effettivi interventi agevolativi, a contribuire al rafforzamento dell'organizzazione criminale, inducendo negli affiliati, anche per la sua autorevolezza politica, il sentimento di essere protetti al più alto livello del potere legale (...).
Alla stregua dell'esposto convincimento, si deve concludere che ricorrono le condizioni per ribaltare, sia pure nei limiti del periodo in considerazione, il giudizio negativo espresso dal Tribunale in ordine alla sussistenza del reato e che, conseguentemente, siano nel merito fondate le censure dei pm appellanti. Non resta allora che confermare, anche sotto il profilo considerato, il già precisato orientamento ed emettere, pertanto, la statuizione di non luogo a procedere per essere il reato concretamente ravvisabile a carico del sen. Andreotti estinto per prescrizione".

Silvio: assolto per aver commesso il fatto

I miei due cent per diffondere la "buona" novella (ossia un pò di vera informazione).

Berlusconi assolto nel processo SME. Alcuni giornali dicono che non ha commesso il fatto, addirittura il Giornale (di famiglia) cita l'artcolo per cui é stato assolto:

«perché manca, è insufficiente o è contraddittoria la prova che il fatto sussite, o che l’imputato lo ha commesso»

suggerendo che lui il fatto non l'ha proprio commesso...
C'è chi dice che bisogna chiedere scusa a Silvio, che ha passato 20 anni di sofferenza (chi? lui?... ma dai...), chi dice che é una grande notizia (per lui non per la giustizia), chi invece ricorda che é stato fatto un uso politico della giustizia (mah...)
Ora la storia è un pò diversa ma ovviamente il Giornale non ce lo spiega. Ce lo spiega il suo difensore, avv. Pecorella (smarrita?):

“Squillante per le sue funzioni non era in grado di ingerire con Sme: già per la Corte di Appello non c’era dubbio che il bonifico ‘Orologio’ sia riconducibile a Berlusconi, ma siccome non c’è stato alcun intervento di Squillante, quella dazione non prova l’iscrizione del magistrato al libro paga”.

Difatti è straprovato che Previti pagasse Squillante e che i soldi provenissero da conti Fininvest. Squillante era costantemente a libro paga di Previti (e Berlusconi) ma Berlusconi viene assolto perchè non è provabile che il fatto che Squillante fosse a libro paga di Silvio abbia in qualche modo condizionato la vicenda SME.

Come Travaglio Scrive:

Berlusconi, secondo il suo stesso difensore, pagò un giudice tramite Previti, ma non è reato. Le motivazioni della Cassazione, a questo punto, si annunciano avvincenti: davvero la Suprema Corte metterà nero su bianco che è lecito pagare un giudice? O magari che è lecito solo quando lo fa Berlusconi?

My two cents to spread the good novel (or a bit of real information).

Berlusconi absolved in the SME trial. Some newspapers say that he didn't commit the fact, "Il Giornale" (the family's newspaper) even quotes the law that absolves Silvio:

«because it's missing, is not sufficient or is contradictory the proof that the fact subsists, or that the suspect commited it»

almost suggesting that he didn't really do anything...
There's who says that we need to apologize to Silvio, that he passed 20 years of suffering (who? him?... come on..., who says it's great news (for him not for the justice probably, who reminds that justice has been used with political intents (mah...)
Now the story is a bit different, but obviously "Il Giornale" does not explain it to us. But his defender attorney, att. Pecorella, gives us the right glance on it:

Squillante (the corrupted judge) was not able to interfere with SME trial: already for the Corte d'Appello (2nd grade of italian trials) there was no doubt that the "Orologio" money transfer operation was linkable to Berlusconi, but, since there's no intervention of Squillante, that transfer does not proof that the judge was payed for that reason

In fact is extra-proved that Previti was paying Squillante and that those money were coming from Fininvest bank accounts. Squillante was constantly on Previti's (and so Berlusconi's) payroll, but Berlusconi has been absolved because it cannot be proved that the fact that Squillante was on his payroll changed in any way the mind of the judge in the SME trial.

As Travaglio is writing:

Berlusconi, according to his defendant, payed a judge through Previti, but it's not a crime. The reasons of the Cassazione (3rd and last grade of italian trials), at this point, will be thrilling: really the Supreme Court will write black on white that is licit to pay a judge? Or maybe that it's licit only when Berlusconi is doing it?

Mastella si che è un gentiluomo...

Tanto per capire meglio chi è il ministro della Giustizia, è uno che dice di De Magistris:

"Mi ha iscritto scientemente nel registro degli indagati perché sapeva che, iscrivendomi, gli veniva tolta l'inchiesta e diventava un eroe nazionale".

Eh beh certo uno segue un'inchiesta per tre anni, lavora di domenica e durante le feste comandate e poi dopo che un ministro a caso ne chiede il trasferimento d'urgenza per motivi scelti a caso dall'ultimo numero di Topolino sai che fa? Iscrive lo stesso ministro nel registro degli indagati per farsi togliere il proprio lavoro... a Mastè ma per cortesia... nel registro degli indagati ci stavi da tempo... mica c'avemo l'anello al naso...

"Non ho alcuna difficoltà: l'inchiesta vada avanti. Sono il primo a chiederlo perché voglio che questi schizzi di fango che mi sono stati gettati addosso mi vengano tolti".

Mastellino caro, non ce lo devi dire tu che l'inchiesta deve andare avanti tanto l'inchiesta, dove sei indagato per reati non proprio leggeri, va avanti da sola. E magari succede pure che una volta che ti tolgono di dosso gli schizzi di fango si inizia a vedere quell'altra cosa marrone che hai addosso.

L'ultimo rantolo della giustizia italiana

E così apprendiamo la notizia che è stata tolta l'inchiesta a De Magistris, quel magistrato che stava indagando, tra gli altri, anche su Mastella e Prodi, rispettivamente Ministro della Giustizia e Presidente del Consiglio.

Fondamentalmente è successo questo: il controllato (De Magistris) indaga sul controllore (Mastella), il controllore lo mette sotto indagine e così il controllato essendo messo sotto inchiesta dal controllore diviene incompatibile con l'inchiesta che sta conducendo.

Bellissima storia di giustizia all'italiana. Giustamente Di Pietro parla di giustizia italiana al capolinea e di governo al capolinea con essa.

Ora mettete il bavaglio anche ai blog e lo stato di polizia è alle porte...

Caffé espresso... speciale

This is the receipt that a group of gays received in a bar in Milan, Italy. For those of you who don't understand italian in the receipt is written:

Espresso Coffee, macchiato hot, for the gays. 3,00 Euros

("ricchione" is one of the many dialectal words in italian to call a gay, and it's moreover pejorative)

Simply astonishing, how the hell can you only think to write something like this in a receipt???

Questa é la ricevuta che un gruppo di ragazzi gay ha ricevuto in un bar di Milano. Semplicemente allucinante... ma come ti viene in mente di scrivere una cosa del genere....?
